Let me 1st say I have never eaten Neckbones and I still wont...LOL! But they sure do season the soup realy good.
Ok lets get started. You will need the following items.
a large pot (like a stock pot)
2 small bags of beans (different kinds of course, or you can use 4 kinds of beans and break it down to 1/2 the bags)
2 Large Tomatos (cut up in chunks, not diced)
1 Large onion
3 Serano Peppers
2 Pieces of Garlic
1 small pack of neckbones (precook in boiling water, save juice you will need it to cook beans in)
Salt/Peper to taste
Ok you always need to presoak the beans for at least 4 hours, better if done over night!
The pot that you previously cooked the neckbones in, you will need to turn it back on to a med-high heat.
While waiting on the liquid to boil, cut up all the veggies.
Add the beans.
Now add all the veggies, salt/pepper, and 3-4 neckbones.
Add water if needed as needed.
Cook on med-high heat until beans are nice and soft.
You are ready to eat, great with corn bread!
