Items needed:
6 Boiled leg quarters (use what ever parts you want)
4 Lrg Tomatos or 12 Roma Tomatos
3 Serrano peppers (use what ever kind you want)
1 Medium Onion
2 Pieces chopped garlic
Handful of chopped Cilantro (optional)
1/4 cup cooking oil
1/4 cup tomato juice or V8
Salt to taste
Tortilla/taco shells
Dice all veggies
In a large frying pan heat oil
Once oil is warm, simmer veggies for about 15 minutes
Take all the meat off the bones
Add meat to the veggies
Add Juice/V8
Add Salt
Simmer until meat is heated
Add mixture to warmed tortillas/taco shells
